For Strawberry Puree: –
1 Pint of Fresh or frozen strawberries
2 Tablespoon White Sugar
1 Tablespoon Water (if using fresh strawberries)
1 teaspoon Freshly squeezed lemon juice
Few Strawberries for decoration
2.5 Cups All purpose Flour
3/4 Cup Sugar
1.5 Teaspoon Baking Powder
1 teaspoon Baking Soda
1/4 teaspoon Salt
1/2 Cup Yogurt
1 Tablespoon Vinegar
1/2 Cup Melted Butter
1/2 Cup Milk(room temperature)
1/4 cup Freshly squeezed orange juice
1.5 Teaspoon Vanilla Extract
1/2 Tablespoon Orange Zest
Strawberry Jelly: – (you will need to make two batches, one for the Strawberry cream frosting and one for decoration)
1 Teaspoon Agar powder
1/2 Strawberry Juice (store bought)
1/2 Cup Water
1/4 Cup Sugar
8 Oz Cool Whip cream
Procedure for Strawberry Puree
Step 1: -In a large sauce pan, add the fresh strawberries over a medium flame.
Step 2: – Add 2 tablespoon of water to avoid burning. Add the sugar and continue to cook over medium flame for about 30 minutes until all the water is evaporated. At this point, the strawberries will be soft and the color will be changed. (The cooking time may vary depending on the quantities and qualities of strawberries).
Step 3: – Remove from heat and add the lemon juice. Once the strawberries are cooled down, put it in the blender and blend it to make puree.
Procedure For the Cake
Step 1: – Preheat oven to 350F/180C for 15 minutes. Prepare two 8inch cake pans by greasing the pans and placing parchment paper.
Step 2: – In a large mixing bowl, sift together flour, baking powder, baking soda and salt, orange zest.
Step 3: – In another bowl, add yogurt, milk, vinegar and keep it aside.
Step 4: – With an electronic beater, beat together butter, sugar and vanilla together.
Step 5: – Add strawberry puree and orange juice in the butter sugar mixture.
Step 6: – Add the dry ingredients and the wet ingredients in three portions into the mixture to incorporate all the ingredients and prepare a thick batter. (If the batter is too thick, you can add little milk to adjust the consistency).
Step 7: – Divide the batter equally into two pans and bake into the preheated oven for 25-30 minutes.
Step 8: – Remove the pans from the oven and allow it to cool for about 5 minutes. Take out the cakes from the pan and let it cool completely before frosting.
Step 1: – In a small bowl add the agar powder and 2 teaspoon water.
Step 2: – In a saucepan, bring water, juice, sugar and the diluted agar to boil (approx 5 minutes)
Step 3: – Allow it to cool and thicken. (it will set up very quickly on room temperature)
Step 4: – With a hand mixer, mix the jelly with the cool whip.
Assembling the cake
Step 1: – Cut the layers of the cake to remove any bumps and make even layers.
Step 2: – Spread the cream on one layer and put another cake layer on top.
Step 3: – Spread another layer of cream on the top cake layer.
Step 4: – Make another batch of jelly to spread on the top.
Step 5: – Cut the strawberries into slices and decorate it on the top layer.
Step 6: – With a spoon spread the jelly on top layer for decoration.
